Ingredients

Scale
  • 4 salmon fillets
  • Salt and pepper
  • 3 tbsp olive oil
  • 2 garlic cloves, minced
  • Zest ½ lemon
  • Juice 1 lemon, approx. 2 tbsp
  • 1 ½ tsp oregano
  • 1 tsp paprika
  • 12 oz green beans, larger ones cut in half
  • 1 pint grape tomatoes, halved

Instructions

  1. Preheat the oven to 425°F and prepare a large baking sheet with parchment paper.
  2. Combine olive oil, minced garlic, lemon zest, lemon juice, oregano, and paprika in a small bowl.
  3. In a separate bowl, toss the green beans with 1 tablespoon of the marinade, then spread them out on the prepared baking sheet and roast for 5 minutes.
  4. Take the baking sheet from the oven, add halved tomatoes along with another tablespoon of the marinade, and toss everything together.
  5. Create space for the salmon fillets in the center and place them on the baking sheet. Season with salt and pepper and brush the remaining marinade over them.
