Description

This Rotel Chicken Bake is a simple and mouthwatering dish that combines juicy chicken breasts, flavorful rotel tomatoes with green chiles, and melted cheddar cheese. Ideal for a quick weeknight dinner, it’s packed with delicious flavors and easy to prepare.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles (1 can), drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat the oven to 400˚F.
  2. Combine the salt, garlic powder, cumin, and chili powder in a small bowl. Season both sides of the chicken breasts and place them flat in a large casserole dish.
  3. Drain the Rotel tomatoes and evenly spoon them over the chicken breasts. Sprinkle the cheddar cheese on top.
  4. Cover the dish with foil and bake for 25 minutes. After that, remove the foil and bake for an additional 5-10 minutes, or until the chicken reaches an internal temperature of 165˚F.
  5. Garnish with freshly chopped cilantro or green onions before serving.

Notes

For extra flavor, marinate the chicken in the spice mix for 30 minutes before cooking.
Add more cheese if you prefer a cheesier dish or try using pepper jack cheese for a kick.
Leftovers can be stored in the refrigerator for up to 3 days.
