- 2 packages (5.3 oz each) Boursin cheese
- 1–1/2 cups chopped de-seeded tomatoes
- 1/4 cup packed fresh basil leaves, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, pressed or minced
- Salt to taste
- Pepper to taste
- Balsamic reduction (Alessi brand recommended)
- Crackers or crostini for serving
Instructions
- Let the Boursin cheese sit at room temperature for 15-20 minutes to slightly soften.
- In a small bowl, combine chopped tomatoes, basil, olive oil, balsamic vinegar, garlic, salt, and pepper; stir well and let it sit for 5 minutes to draw out tomato juices.
- Transfer the softened Boursin cheese to a shallow serving dish and spread it evenly with the back of a spoon.
- Spoon the bruschetta mixture over the Boursin cheese, reserving the juices in the bowl.
- Drizzle balsamic reduction on top and garnish with additional basil leaves. Serve immediately with crackers or crostini.
Notes
For added flavor, use vine-ripened or Roma tomatoes.
Balsamic reduction can enhance the presentation and taste of the dip.
