Description

This Creamy Cucumber Pasta Salad combines the delightful flavors of rotini pasta, fresh cucumbers, and a creamy dressing, making it an ideal quick meal or side dish that everyone will love.


Ingredients

  • 1/2 pound rotini pasta
  • 1 cucumber, thinly sliced
  • 1/2 sweet white onion, thinly sliced
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp dill
  • 2 tbsp white vinegar

Instructions

  1. Cook the rotini pasta to al dente according to package instructions, then rinse under cold water to cool.
  2. Slice the cucumber in half lengthwise, scoop out the seeds, and cut into thin slices.
  3. Thinly slice the onion and soak in a bowl of cold water to reduce sharpness.
  4. In a small bowl, whisk together sour cream, mayonnaise, sugar, salt, dill, and white vinegar to create the dressing.
  5. In a large bowl, toss together the cooked pasta, cucumber, onion, and dressing. Refrigerate for 45 minutes before serving.

Notes
