Description

These Chocolate Zucchini Muffins offer a delightful blend of rich cocoa and moist zucchini, making them a perfect treat for any occasion. They’re easy to prepare and absolutely delicious, ideal for breakfast, snacks, or dessert!


Ingredients

  • 2 cups flour
  • 1/2 cup cocoa powder
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 egg
  • 5 tbsp butter, melted
  • 1 tsp vanilla
  • 1 cup milk
  • 3/4 cup chocolate chips
  • 1 cup zucchini, shredded

Instructions

  1. Preheat the oven to 375 degrees F. Line a 12-cup muffin pan with liners and set aside.
  2. In a large bowl, whisk together the flour, cocoa powder, white sugar, brown sugar, baking powder, and baking soda until combined.
  3. Add the egg, melted butter, and vanilla to the dry ingredients, and mix well. Gradually stir in the milk until just combined.
  4. Fold in the chocolate chips and shredded zucchini, mixing until evenly distributed.
  5. Scoop the batter evenly into the prepared muffin liners, and sprinkle additional chocolate chips on top if desired.
  6. Bake in the oven for about 20 minutes, or until a toothpick inserted comes out clean.

Notes

For added moisture, make sure to squeeze out excess water from zucchini before adding.
These muffins can be stored in an airtight container for up to 3 days or frozen for later enjoyment.
Feel free to add nuts or coconut for extra texture and flavor.
