Description

These Blueberry Lemon Bars combine the tanginess of lemon with the sweetness of fresh blueberries, creating a delightful treat that’s perfect for any gathering. With simple ingredients and easy prep, these bars offer a refreshing taste of summer, ideal for picnics or dessert.


Ingredients

  • 2 cups all purpose flour
  • 1 cup unsalted butter, room temperature
  • 1/2 teaspoon salt
  • 1/2 cup powdered sugar
  • 4 eggs
  • 2 cups granulated sugar
  • 1/4 cup all purpose flour
  • 1/4 cup lemon juice
  • 2 teaspoons lemon zest, optional
  • 1 cup fresh blueberries

Instructions

  1. In a medium bowl, mix the all purpose flour, salt, and powdered sugar. Cut in the room temperature butter until the mixture resembles crumbs.
  2. Grease a 9×13 inch baking pan. Firmly press the crumb mixture into the bottom of the pan to form a crust.
  3. Bake the crust in a preheated oven at 350°F for 18-20 minutes or until light golden brown, then remove and let cool.
  4. In another bowl, whisk the eggs until well combined. Add in the granulated sugar and 1/4 cup of flour, whisking until smooth. Mix in the lemon juice and optional lemon zest before pouring this mixture over the baked crust, and evenly sprinkle the blueberries over the top.
  5. Bake the entire dish again for 20-25 minutes until the top is lightly golden brown. After baking, cool it on a wire rack.
  6. Once cooled slightly, refrigerate the bars for at least 2 hours before serving. Dust with powdered sugar and slice into bars.

Notes

For extra flavor, use fresh lemon juice and zest.
Feel free to adjust the amount of blueberries depending on your preference.
These bars can be stored in the refrigerator for up to one week.
