- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Prepare a blender or food processor with an opening on top for adding ingredients during blending.
- Halve the avocado, remove the pit and skin, then add the avocado flesh to the blender or food processor.
- Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender. Do not add oil yet!
- Secure the lid, begin blending, and slowly drizzle in the avocado oil until fully incorporated. Blend for a few seconds longer after all oil is added.
- Adjust the consistency and flavor by adding more avocado oil for a thinner dressing and blend again.
Notes
Ensure the blender has a top opening for easy ingredient addition.
Taste and adjust the seasoning as needed for optimal flavor.
Feel free to substitute cilantro with basil or parsley for different flavor profiles.
