Description

These Zucchini Muffins are a delightful mix of flavors, featuring grated zucchini and warm spices, perfect for breakfast or a quick snack. Easy to prepare, they make a healthy option for any meal of the day.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine kosher salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 cup avocado oil or vegetable oil
  • 1/4 cup unsalted butter melted and cooled
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • Coarse sugar for sprinkling on top of the muffins (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a 12-cup muffin pan with parchment liners or grease with cooking spray.
  2. In a large bowl, combine all-purpose flour, wheat flour, baking powder, baking soda, salt, cinnamon, and allspice.
  3. In another bowl, mix together the oil, melted butter, brown sugar, granulated sugar, eggs, vanilla, and grated zucchini until well blended.
  4. Add the wet mixture to the dry ingredients, folding gently with a spatula until no flour streaks remain.
  5. Evenly divide the batter into the prepared muffin pan. If desired, sprinkle coarse sugar on top of each muffin.
  6. Bake on the middle rack for 5 minutes at 425°F, then lower the temperature to 350°F (175°C) and continue baking for 12-15 minutes, or until a toothpick comes out with a few crumbs.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack. Serve warm or let cool completely before storing.

Notes

For moist muffins, do not overmix the batter once the wet and dry ingredients are combined.
Feel free to add nuts or chocolate chips for additional flavor and texture.
Store leftover muffins in an airtight container at room temperature for up to 3 days.
