  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 (24 ounce) jar pasta sauce
  • 1 (14.5 ounce) can petite diced tomatoes (gently drained)
  • 1 egg
  • 2 cups shredded Italian cheese blend
  • ¼ cup milk
  • garlic bread or pasta (for serving, optional)

Instructions

  1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
  2. Slice the zucchini in half lengthwise and then cut into ½-inch pieces.
  3. Heat the olive oil in a large skillet over medium-high heat, add zucchini, salt, and pepper, and cook until the zucchini is softened (about 3 to 6 minutes). Transfer to the baking dish.
  4. In the same skillet, cook the ground beef and onion over medium-high heat until the meat is browned. Drain any excess fat.
  5. Add Italian seasoning, garlic powder, pasta sauce, and diced tomatoes to the skillet; mix well and combine with the zucchini in the baking dish.
  6. In a bowl, whisk together the egg and milk, then stir in the cheese. Spoon this mixture evenly over the casserole.
  7. Bake for 25 to 30 minutes until bubbly and golden brown on top. Let rest for 10 minutes before serving.
