These zucchini fritters are a delightful mix of flavors, featuring fresh zucchini, parmesan, and mozzarella. They’re quick to prepare and ideal as a delicious snack or side dish.

- 3 tbsp avocado, canola, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp fresh cracked black pepper
Instructions
- Grate zucchini using a box grater with larger holes and place it in a mesh bag or cheese cloth.
- Squeeze out excess liquid from the zucchini to avoid sogginess.
- In a mixing bowl, combine squeezed zucchini with remaining ingredients and mix thoroughly.
- Preheat a large pan over medium heat, adding oil to the pan.
- Using an ice cream scoop, scoop even amounts of the zucchini mixture, shaping them into fritters as you go.
- Carefully place the fritters into the pan and cook without disturbing for about 4-6 minutes on each side until golden.
- If cooking multiple batches, add more oil as needed between batches.
Notes
Ensure you remove excess moisture from the zucchini for crispy fritters.
Adjust cooking time based on the size of your fritters.
Don’t flip the fritters too early to prevent breaking.
