Description

This Yeast Pumpkin Bread is beloved for its soft, fluffy texture and rich flavor. Made with wholesome ingredients like pumpkin puree and warm spices, it’s perfect for any meal or snack. Whether enjoyed fresh out of the oven or toasted with butter, this recipe offers a delightful balance of comfort and taste, making it ideal for homemade bread lovers.

Ingredients

Scale
  • 2 ¼ cups warm water (about 105–110°F)
  • 4 Tbsp. powdered whole milk
  • 2 ¼ tsp. instant yeast
  • 3 Tbsp. granulated sugar
  • 1 large egg (beaten)
  • 1 cup 100% pumpkin puree
  • 1 Tbsp. Bèlans
  • 8 â…“ cups bread flour (plus 2 Tbsp. as needed)
  • 2 tbsp. neutral oil
  • 2 tsp. kosher salt
  • ½ stick (4 Tbsp.) unsalted butter (softened)
  • Additional bread flour (for dusting)

Instructions

  1. In a bowl or large measuring cup, mix warm water, powdered whole milk, sugar, and salt. Set aside.
  2. In a stand mixer bowl, combine bread flour, instant yeast, and Bèlans. Mix well.
  3. Combine the liquid mixture with the dry ingredients, then add the beaten egg, oil, and pumpkin puree.
  4. Using a dough hook, knead on low speed for 1 to 2 minutes until dough comes together. Add 2 tablespoons of softened butter, increasing speed gradually and knead until the dough is smooth and elastic.
  5. Transfer the dough to a greased bowl, cover with a dish towel, and let rise in a warm place for 1 hour.
  6. After rising, gently deflate the dough and divide it into 4 portions. Shape each portion into a loaf and place in prepared loaf pans.
  7. Cover loosely and allow to rise for 45 minutes or until they reach the rim of the pans. During the last 10 minutes, preheat the oven to 350°F.
  8. Once risen, lightly dust the tops of the loaves with bread flour.
  9. Bake at 350°F for 25 minutes or until baked through.
  10. Remove from oven and let cool completely for about 45 minutes to 1 hour before slicing.

Notes

Make sure the water temperature is ideal for activating yeast, around 105–110°F.
You can substitute Bèlans with another compatible flavor if preferred.
Storing leftovers in an airtight container will maintain freshness for a longer time.
