Description

This Vegetable Stir Fry is packed with vibrant flavors and healthy ingredients like broccoli, bell peppers, and carrots. Perfect for a quick and easy dinner, it combines savory soy sauce and fresh veggies for a delightful meal that everyone will enjoy.


Ingredients

  • ⅓ cup reduced-sodium soy sauce or tamari
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup
  • 2 teaspoons arrowroot starch or 1 teaspoon corn starch
  • 2 large cloves garlic, pressed or minced
  • ¼ teaspoon crushed red pepper
  • 1 tablespoon sesame seeds, for garnish
  • 1 tablespoon avocado oil, coconut oil or your cooking oil of choice
  • 1 small red onion, cut into ¼-inch thick wedges (about 1 cup)
  • 2 medium carrots, peeled and cut into very thin rounds (about 1 ½ cups)
  • pinch of salt
  • 1 medium red bell pepper, cut into ¼ inch strips (about 1 ¼ cup)
  • 1 medium yellow bell pepper, cut into ¼ inch strips (about 1 ¼ cup)
  • 1 cup small broccoli florets (from about 1 stalk)
  • 2 tablespoons water
  • thinly sliced green onion, for garnish

Instructions

  1. In a measuring cup, combine soy sauce, sesame oil, honey, starch, garlic, and red pepper flakes. Whisk until blended and set aside.
  2. Warm sesame seeds in a skillet over medium heat, stirring until fragrant, about 1 minute. Transfer to a plate and set aside.
  3. In the same skillet, warm oil over medium heat. Add onion, carrots, and a pinch of salt. Cook, stirring every 30 seconds, until onions soften, about 4 to 6 minutes.
  4. Add bell peppers and broccoli, stir to combine. Pour in water and cover the pan. Cook, stirring every minute, until veggies are fork-tender and browning, about 7 to 9 minutes.
  5. Remove from heat, pour in prepared sauce, and stir to coat veggies. Taste and adjust salt as needed. Serve garnished with sesame seeds and green onion.

Notes

Feel free to add any other vegetables you enjoy or have on hand, such as snap peas or zucchini.
For a heartier meal, serve this stir fry over cooked rice or noodles.
To reheat, simply warm in a skillet over low heat until heated through.
