Description

This Peach Cobbler Pound Cake combines the sweetness of ripe peaches and creamy butter for a decadent dessert. Perfect for gatherings, it brings comfort food to the next level with each slice that is both fluffy and flavorful.

Ingredients

Scale
  • 1 ripe peach, peeled, sliced
  • ½ cup brown sugar
  • ½ cup melted butter
  • 1 ½ cups butter, softened
  • 1 ¼ cup sugar
  • 1 ¼ cup light brown sugar
  • 1 cup cream cheese, softened
  • 6 eggs
  • 1 Tablespoon vanilla extract
  • 3 cups flour
  • ¼ teaspoon salt
  • 2 ripe peaches, peeled and chopped
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 Tablespoons whole milk

Instructions

  1. Preheat the oven to 300 degrees F and spray a large bundt pan with baking spray.
  2. Create the topping by placing sliced peaches in the bottom of the greased bundt pan. Mix brown sugar and melted butter together and pour over the peaches. Set aside.
  3. For the cake batter, beat together softened butter, sugar, brown sugar, and cream cheese until light and fluffy, ensuring to scrape down the bowl for even mixing.
  4. Add eggs one at a time, mixing well after each addition and scraping the bowl.
  5. Stir in vanilla extract and mix again.
  6. Add flour gradually in ½ cup increments, mixing after each addition. Stir in the salt once fully incorporated.
  7. Fold in the diced peaches gently with a spatula.
  8. Pour the batter over the peaches in the bundt pan.
  9. Bake for 70 minutes at 300 degrees F, or until a toothpick inserted in the center comes out clean.
  10. Allow the cake to cool in the pan for 30 minutes before flipping it onto a serving plate.
  11. Prepare the glaze by mixing powdered sugar, vanilla, salt, and milk. Drizzle the glaze over the cooled cake and serve.

Notes

Ensure that the bundt pan is well-greased to prevent sticking.
Feel free to add more spices like cinnamon for extra flavor.
This cake can be stored in an airtight container for up to 3 days.
