Description

Tres Leches Cake is a deliciously moist dessert soaked in a trio of milks, featuring eggs, flour, and topped with whipped cream. Perfect for gatherings and celebrations!


Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 5 large eggs separated
  • 3/4 cup granulated sugar for the yolks
  • 1/4 cup granulated sugar for the egg whites
  • 1/3 cup whole milk at room temperature
  • 1 tsp vanilla extract
  • 12 oz evaporated milk 1 can
  • 14 oz sweetened condensed milk 1 can
  • 1/2 cup heavy cream
  • 2 cups heavy whipping cream cold
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350F and grease a 9×13 inch baking dish, optionally using parchment paper.
  2. In a medium bowl, whisk the flour, baking powder, and salt together. Set aside.
  3. In a large bowl, beat the egg yolks with 3/4 cup sugar until thick and pale, around 2-3 minutes.
  4. Add the milk and vanilla to the yolk mixture, then gently fold in the dry ingredients until no streaks remain.
  5. In a clean bowl, whip the egg whites to soft peaks. Gradually add the remaining 1/4 cup sugar and whip to stiff peaks.
  6. Gently fold the egg whites into the batter in two additions to retain air.
  7. Pour the batter into the prepared pan and bake for 25 to 30 minutes, checking for doneness with a toothpick at around 25 minutes.
  8. Allow the cake to cool completely in the pan for at least 1 hour.
  9. In a bowl, whisk the evaporated milk, condensed milk, and heavy cream together.
  10. Poke holes all over the cooled cake with a fork, then slowly pour the milk mixture over the cake, allowing it to soak.
  11. Cover and refrigerate for at least 4 hours, preferably overnight for optimal flavor.
  12. Before serving, whip the heavy cream with powdered sugar and vanilla to soft peaks.
  13. Spread or pipe the whipped cream over the chilled cake, slice, and serve cold.

Notes

Ensure the cake cools completely before adding the milk mixture to avoid sogginess.
Chilling the cake overnight enhances its flavor and texture.
Use a fork to poke holes evenly for proper absorption of the milk mixture.
