- 15 ounces corn, drained
- 1 medium tomato, diced
- 1 jalapeño, seeds and ribs removed and diced
- 1/4 red onion, diced
- 2 garlic cloves, minced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 2 tablespoons minced fresh cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
Instructions
- In a large bowl, combine the black beans, corn, diced tomato, jalapeño, red onion, and minced garlic.
- Pour in the lime juice and olive oil, then add the minced cilantro, cumin, kosher salt, and black pepper.
- Stir all the ingredients together until well mixed, then taste and adjust seasoning if necessary.
Notes
For a spicier salsa, leave some seeds in the jalapeño.
This salsa can be prepared a few hours in advance to let the flavors meld together.
