Description

Ingredients

  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon (0.5 teaspoon) almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon (0.5 teaspoon) salt
  • 4 ounces (113.4 g) cream cheese
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat the oven to 375°F (190°C) and line two baking sheets with parchment paper.
  2. Using a stand mixer, beat together the butter and granulated sugar until light and fluffy, about 3 minutes. Incorporate the egg, egg yolk, vanilla, and almond extract on low speed until combined, approximately 30 seconds.
  3. Gradually mix in the baking soda, salt, and flour until just combined.
  4. Scoop the dough into large balls, using a ¼ cup cookie scoop for consistency.
  5. Place 6-7 cookie dough balls on each lined baking sheet. Bake for 11-14 minutes until light golden brown on the edges, with some crackling on top. Avoid overbaking to maintain chewiness.
  6. For the frosting, beat together cream cheese and salted butter until smooth. Mix in vanilla, a pinch of salt, and powdered sugar until well blended. Spread the frosting over each cooled cookie.
  7. Finely dice fresh fruit and place it on top of the frosted cookies.

Notes

Ensure the butter is at room temperature for easy mixing.
For a variety of flavors, try different fruits like strawberries, kiwis, or blueberries on top.
Cool cookies completely before applying frosting to prevent melting.
