These stuffed peppers are a delicious twist on a classic dish, packed with ground beef, Italian sausage, and marinara sauce. Perfect for a quick dinner or a healthy meal, they offer a comforting flavor that everyone will love!

- 6 medium bell peppers any color
- 8 ounces lean ground beef
- 8 ounces italian sausage
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 (14.5 ounce) can canned petite diced tomatoes with juice
- 1 ¼ cups water
- 1 tablespoon worcestershire sauce
- ½ cup long grain white rice uncooked
- ½ teaspoon italian seasoning
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- 2 ½ cups marinara sauce divided
- ½ cup shredded mozzarella cheese optional
Instructions
- Preheat the oven to 350°F and grease a 9×13-inch casserole dish.
- Remove the tops of the bell peppers, chop the tops finely, and set aside. Core and deseed the peppers.
- In a large pot, boil water and cook the peppers for 5 minutes, then drain. You may also air fry them at 400°F for 5 minutes instead.
- Heat a large skillet over medium-high heat, and cook the ground beef, Italian sausage, onion, and garlic until browned. Drain excess fat.
- Stir in diced tomatoes, water, Worcestershire sauce, uncooked rice, chopped pepper tops, Italian seasoning, salt, and black pepper. Bring to a boil, then simmer until rice is tender, about 15-20 minutes, adding more water as needed. Stir in ½ cup marinara and season to taste.
- Place 1 ½ cups marinara sauce at the bottom of the baking dish. Stuff the peppers with the rice mixture and top with remaining marinara sauce.
- Cover with foil and bake for 35 minutes. Remove foil, spoon sauce from the dish over peppers, add cheese if desired, and bake uncovered for another 10-12 minutes until cheese melts and peppers are tender.
- Let rest for 5 minutes before serving.
Notes
You can use bell peppers of any color for this recipe.
Feel free to substitute ground turkey or chicken for a lighter option.
Add extra vegetables like mushrooms or spinach to the filling for added nutrition.
