These strawberry shortcake cookies are bursting with flavor and are quick to prepare. With fresh strawberries and creamy white chocolate, they are perfect for any dessert lover.

- 1 cup powdered sugar
- 1–2 tbsp half & half
- 2 1/2 cups all-purpose baking mix
- 1/2 cup sugar
- 1/2 cup half & half
- 4 tbsp butter (melted)
- 1 cup strawberries (chopped)
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 425 degrees Fahrenheit. Line a cookie sheet with parchment paper and set aside.
- In a large bowl, whisk together the baking mix and sugar until combined.
- Stir in 1/2 cup half & half and melted butter to form a soft dough.
- Gently fold in the chopped strawberries and white chocolate chips until mixed evenly.
- Scoop 1 1/2 tablespoons of cookie dough onto the prepared cookie sheet, leaving space for spreading.
- Bake for 8-10 minutes until lightly golden.
- Once baked, cool the cookies on the warm sheet for 5 minutes before transferring them to a cooling rack.
- To prepare the glaze, whisk together the powdered sugar and 1-2 tablespoons of half & half until smooth, then drizzle over the cooled cookies.
Notes
For best results, make sure the strawberries are ripe and sweet.
Feel free to substitute the white chocolate chips with dark chocolate for a different flavor profile.
Store any leftover cookies in an airtight container to maintain freshness.
