Description

These Strawberries and Cream Cookies are a delightful treat with a burst of strawberry flavor paired with creamy white chocolate. Perfect for any occasion, they are simple to make and incredibly delicious, making them an appealing choice for those in search of easy homemade recipes.

Ingredients

Scale
  • 3 cups (360 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 and 1/4 cups (248 g) granulated sugar
  • 1/4 cup (53 g) light brown sugar, packed
  • 1 tablespoon (14 ml) vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1.2 ounce bags (68 g) freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F and line two large baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt, then set aside.
  3. In a stand mixer or large bowl, combine room temperature butter with both sugars and beat on medium speed until light and fluffy, about 3 minutes. Add vanilla extract and mix well.
  4. Reduce the mixer speed to medium-low and add eggs one at a time, mixing well after each addition.
  5. Lower the mixer speed to low and gradually mix in the flour mixture until just combined. Fold in the white chocolate chips and dried strawberries until evenly distributed.
  6. Using a large cookie scoop, portion 3 tablespoons of cookie dough, rolling each into a ball. Place the dough balls on the prepared sheet, ensuring ample space between them.
  7. Bake one sheet at a time for 12 to 13 minutes, until the edges are golden and the center remains soft.
  8. Remove from the oven; use a spatula to shape any spread edges back into a rounded cookie. Optionally, add extra white chocolate chips on top.
  9. Cool cookies on the baking sheet for 20 minutes on a wire rack before serving.

Notes

For a lighter cookie, use a scale to weigh your flour for accuracy.
You can substitute the freeze-dried strawberries with fresh strawberries, but be aware of additional moisture.
These cookies can be stored in an airtight container for up to a week.
