Description

This Slow Cooker Meatloaf combines savory ground beef, eggs, and crushed saltines for a flavorful, easy-to-make dinner. With a delicious ketchup glaze, it’s sure to be a comfort food favorite!


Ingredients

  • 30 saltine crackers, finely crushed
  • 1/2 cup ketchup
  • 2 eggs
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 pounds ground beef, 80/20 or 85/15
  • 1/2 cup finely diced onion
  • 1 cup ketchup
  • 1/2 cup brown sugar

Instructions

  1. Line the slow cooker with heavy-duty aluminum foil, allowing extra on the ends for better removal of the meatloaf.
  2. In a large bowl, mix the crushed saltines, 1/2 cup ketchup, eggs, milk, salt, and pepper until combined.
  3. Add the ground beef and diced onion; mix until fully incorporated.
  4. Shape the mixture into an oval with a dome on top and place it in the crockpot.
  5. Combine the topping ingredients and spread about 1/3 cup over the meatloaf.
  6. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the internal temperature reaches 160℉.
  7. Carefully remove the meatloaf using the foil and transfer it onto a rimmed baking sheet.
  8. Preheat the oven's broiler.
  9. Spread more ketchup mixture on the meatloaf's top and sides.
  10. Broil for 2-3 minutes until the glaze is warm and bubbly, watching closely to prevent burning.
  11. Allow the meatloaf to rest for 10 minutes before slicing and serving.

Notes

Using a higher fat content beef will create a juicier meatloaf.
Experiment with additional spices or herbs for an extra flavor boost.
This meatloaf pairs well with mashed potatoes or a fresh salad.
