Description

This Shredded Sun-Dried Tomato Tempeh Stir-Fry is packed with flavor and easy to make. With its savory tempeh, sun-dried tomatoes, and aromatic spices, it’s perfect for a quick dinner or a healthy meal any time.


Ingredients

  • 1 tbsp tamari
  • 1 tbsp mirin
  • 1 tbsp red wine vinegar
  • 1 package (8oz) tempeh
  • 2 tbsp avocado oil
  • 1 large shallot, diced
  • 1/4 cup sun-dried tomatoes packed in oil, drained and julienned
  • 4 cloves garlic
  • 1 tsp smoked paprika
  • 1/2 tsp ground coriander
  • 1/2 tsp fennel seeds
  • 1/4 tsp allspice
  • 1/4 tsp ground white pepper
  • kosher salt

Instructions

  1. Grate the tempeh using a box grater and break it into shreds.
  2. Combine tamari, mirin, and red wine vinegar in a small bowl and set aside.
  3. Heat one tablespoon of avocado oil in a pan over medium heat.
  4. Add the grated tempeh in a single layer and cook undisturbed for 2 minutes.
  5. Sprinkle tempeh with a pinch of salt, toss, and cook for another 5 minutes until golden.
  6. Transfer the tempeh to a bowl, clean the pan, and return it to the heat.
  7. Add remaining tablespoon of avocado oil and diced shallots; sauté for 5 minutes.
  8. Stir in sun-dried tomatoes and garlic, cooking until fragrant, around 2 minutes.
  9. Add spices (smoked paprika, coriander, fennel seeds, allspice, white pepper) and sauté for 2 minutes.
  10. Return tempeh to the pan, pour in the tamari mixture, and stir to combine. Cook until the liquid absorbs into the tempeh.
  11. Taste and adjust seasonings as needed before serving with grains or greens.

Notes

Feel free to substitute the tamari with soy sauce if not gluten-free.
For added nutrition, serve with quinoa or brown rice.
