Description

Sheet Pan Chicken Fajitas deliver incredible flavor with minimal effort. This recipe features juicy chicken, colorful bell peppers, and zesty seasoning, making it an easy and satisfying meal perfect for any night.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breast
  • 1 medium yellow onion
  • 1 green bell pepper
  • 1 red bell pepper
  • 2 tbsp fajita seasoning
  • 1 tbsp oil
  • 1 lime
  • flour tortillas
  • Mexican rice
  • refried beans
  • shredded lettuce
  • pico de gallo
  • guacamole
  • sour cream
  • shredded cheese

Instructions

  1. Preheat your oven to 400ËšF.
  2. Slice the chicken breast into 1/4"-1/2" strips against the grain, placing them on one half of a large baking sheet. For easy cleanup, you may line the sheet with foil.
  3. Drizzle half of the oil over the chicken, sprinkle with fajita seasoning, and toss with tongs to evenly coat. Squeeze the juice from half of the lime over the chicken and mix again.
  4. Thinly slice the onions and bell peppers and place them on the other half of the baking sheet, tossing with the remaining oil.
  5. Bake for 12-16 minutes until the chicken reaches 165ËšF. Avoid overcooking to keep the meat tender.
  6. Remove from the oven and drizzle the remaining lime juice over the chicken and vegetables.
  7. Serve with tortillas and your favorite toppings like rice, beans, sour cream, guacamole, cheese, and pico de gallo. ENJOY!

Notes

Feel free to mix and match bell pepper colors to your preference.
Using fresh lime juice adds a vibrant flavor to the dish.
For a spicier kick, consider adding sliced jalapeños or hot sauce.
