Description

This Savory Breakfast Bowl is a hearty dish featuring crispy potatoes, flavorful ground meat, and fresh toppings like avocado and salsa. It’s quick to prepare, satisfying, and perfect for a healthy breakfast or any meal of the day.

Ingredients

Scale
  • 2 tablespoons ghee or oil, divided
  • 4 oz baby red potatoes, quartered
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp chili powder
  • 1 handful chopped kale
  • 1 tablespoon water
  • 3–4 oz ground pork sausage
  • 1 large egg
  • 1/4 avocado, sliced
  • Lime juice, to taste
  • 1 scallion, thinly sliced
  • Fresh salsa, to taste

Instructions

  1. Place the potatoes in a microwave-safe bowl and heat on high for 3 minutes to soften.
  2. Heat a medium skillet over medium-high heat and add the ghee or oil. Add the softened potatoes and sprinkle with sea salt, black pepper, smoked paprika, garlic powder, and chili powder.
  3. Fry the potatoes until browned and crisp, about 3 minutes. Use a slotted spoon to remove them to a bowl and keep warm with aluminum foil.
  4. Add a bit more ghee to the skillet, then add the chopped kale and water. Cover to wilt the kale, then uncover and stir until it reaches your preferred consistency. Add to the bowl with the potatoes.
  5. In the same skillet, add the ground pork or any ground meat and cook until browned, about 2 minutes. Add to the bowl and cover to keep warm.
  6. Adjust the heat to medium and add the remaining tablespoon of ghee to the skillet. Fry the egg to your preference, spooning some of the ghee over the top or flipping it if desired.
  7. Add the fried egg to the bowl and top with sliced avocado drizzled with lime juice and a sprinkle of sea salt, followed by scallions and fresh salsa. Serve immediately.

Notes

For extra flavor, consider adding your favorite herbs to the potatoes while cooking.
You can substitute ground pork with turkey or chicken for a leaner option.
Make sure not to overcook the kale to retain its vibrant color.
