Description
Sausage Stuffed Butternut Squash is a satisfying dish with savory Italian sausage, fresh herbs, and sweet apple. Perfect for a healthy dinner that offers both comfort and flavor.
Ingredients
Scale
- 2 medium butternut squash
- 3 Tbsp avocado oil or olive oil, divided
- Sea salt and black pepper to taste
- 1 lb Bulk Italian sausage
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 Tbsp fresh sage leaves, minced
- 1 Tbsp fresh rosemary leaves, minced
- 1 Tbsp fresh thyme leaves, minced
- 3 cups kale, chopped
- 1 medium apple, chopped
- 1 cup pecans, chopped
- 1/2 cup dried cranberries (apple juice sweetened)
Instructions
- Preheat your oven to 425° F and line a large baking sheet with parchment paper.
- Cut each butternut squash lengthwise to create 4 long halves. Scoop out seeds and strings, drizzle with 2 Tbsp of oil, and sprinkle with salt and pepper. Place face down on the baking sheet and roast for about 40 minutes, or until softened.
- Heat a large skillet over medium heat, add the remaining tablespoon of oil. Crumble the sausage into the skillet and cook until about 3/4 done. Add onions and garlic, cooking for 2 minutes until soft and fragrant. Stir in the fresh herbs and cook for another minute.
- Add kale, apples, and pecans, cooking for another minute or two until softened. Remove from heat, stir in cranberries, and season with salt and pepper to taste.
- Once the squash is cooked, let it cool for about 5 minutes, then scoop out the flesh, leaving a 3/4” border. Save the squash for later use if desired.
- Fill each squash half generously with the sausage mixture. Broil under the broiler for 2-4 minutes until golden brown. Garnish with fresh herbs if desired and enjoy.
Notes
Ensure the squash is tender by checking after 40 minutes of roasting.
You can substitute the apple variety with your preferred choice, ensuring it’s sweet for balance.
This dish keeps well and can be reheated; great for meal prep.
