- 2 large red onions, very thinly sliced (about 4 to 5 cups sliced)
- 2 cups (480 ml) apple cider vinegar
- 1 cup (240 ml) water
- 2 tablespoons granulated sugar
- 1 tablespoon kosher salt
- 1 teaspoon black peppercorns
- 4 cloves garlic, smashed
- ½ teaspoon red pepper flakes, optional, for a little heat
Instructions
- Slice the red onions thinly and pack them into a 2-quart glass jar (or divide between two quart jars or four pint jars).
- Combine apple cider vinegar, water, granulated sugar, kosher salt, black peppercorns, smashed garlic, and red pepper flakes in a saucepan or microwave-safe bowl.
- Heat until sugar and salt dissolve, about 1 to 2 minutes on the stovetop or 30 to 45 seconds in the microwave; do not boil.
- Pour the warm brine over the onions, ensuring they're completely submerged. Press down gently with a spoon or chopstick.
- Allow to cool for 20 to 30 minutes, then seal the jar and refrigerate. Enjoy after chilling for at least 15 to 30 minutes, or let them flavor overnight.
Notes
For extra flavor, let the onions pickle longer before using them.
