These Pumpkin Whoopie Pies with Cream Cheese Filling are a delightful treat! Ingredients

  • 2 1/2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp pumpkin pie spice
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup oil
  • 1 egg
  • 1 1/2 tsp vanilla
  • 4 oz cream cheese, softened
  • 1/4 cup butter, softened
  • 2 tsp vanilla
  • 2–3 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together the flour, baking soda, baking powder, and pumpkin pie spice.
  3. In a large bowl, beat together the sugar, brown sugar, pumpkin puree, and oil until smooth.
  4. Add the egg and vanilla, mixing well.
  5. Gradually incorporate the dry ingredients into the wet mixture until fully combined.
  6. Scoop tablespoon-sized amounts of dough onto the prepared baking sheet, leaving space for spreading.
  7. Bake in the preheated oven for 10 minutes or until cooked through.
  8. Allow the cookies to cool for a few minutes before transferring them to a cooling rack.
  9. For the filling, beat together the softened cream cheese and butter until smooth.
  10. Mix in the vanilla and 1 cup of powdered sugar; adjust the remaining powdered sugar for your desired thickness.
  11. Spread the filling onto the flat side of one cookie and top it with another, creating a sandwich.

Notes

Feel free to adjust the amount of powdered sugar in the filling for your preferred sweetness.
These whoopie pies can be stored in an airtight container in the refrigerator for a few days. Enjoy them chilled or at room temperature!
You can substitute the pumpkin puree with applesauce for a different but tasty variation.
