Ingredients

Scale
  • 2 Eggs
  • 1 1/2 cups Buttermilk
  • 1/2 cup Butter, Melted & Cooled
  • 1 tsp Vanilla
  • 1/2 cup Pumpkin Puree
  • 1 3/4 cups Flour
  • 2 tsp Pumpkin Pie Spice
  • 3 tbsp Sugar
  • 2 tsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tsp Salt

Instructions

  1. Preheat a waffle iron.
  2. In a medium bowl, beat together eggs, buttermilk, melted butter, vanilla, and pumpkin puree until fully combined.
  3. In a separate bowl, whisk together flour, pumpkin pie spice, sugar, baking powder, baking soda, and salt.
  4. Combine the dry ingredients with the wet ingredients just until mixed.
  5. Spray the waffle iron with non-stick spray.
  6. Scoop 1 cup of batter into the waffle iron and cook until golden. Repeat until all batter is used.

Notes

For crispier waffles, let the batter sit for a few minutes before cooking.
Use fresh pumpkin puree for a more intense pumpkin flavor if desired.
