Description

These Pumpkin Truffles offer an irresistible blend of cream cheese, pumpkin puree, and white chocolate, making them a perfect homemade treat for any occasion. With simple steps and tasty ingredients, they are sure to impress friends and family!


Ingredients

  • 4 ounces cream cheese, softened
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until smooth and creamy.
  2. Stir in pumpkin puree and cinnamon, mixing until fully incorporated.
  3. Add graham cracker crumbs, pumpkin pie spice, and cinnamon. Mix on medium speed for 1-2 minutes until the dough is thick and smooth.
  4. Transfer the dough to a bowl, cover, and refrigerate for about 2 hours.
  5. Line a baking sheet with parchment paper.
  6. Scoop a tablespoon of dough and roll it into a ball about 1 inch in diameter. Place on the baking sheet with truffles spaced 2 inches apart, yielding approximately 20 truffles.
  7. Chill for 20-25 minutes before dipping in chocolate.
  8. Melt the white chocolate chips in a microwave-safe bowl, heating at 100% power in 10-15 second intervals until smooth.
  9. Remove truffles from the refrigerator. Use a fork to dip each truffle in the melted chocolate, ensuring full coverage.
  10. Scrape excess chocolate off the fork against the bowl edge and place the truffle back onto the baking sheet.
  11. Repeat for remaining truffles. Re-dip any exposed areas if necessary once they have set enough to handle.
  12. Sprinkle with English toffee bits or graham cracker crumbs before the chocolate hardens.
  13. Refrigerate the truffles until set before serving. They can be kept at room temperature for a few hours.
