  • ¾ cup (150g) granulated sugar

  • ½ teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ½ teaspoon salt
  • 2 cups (248g) all-purpose flour
  • 4 tablespoons (57g) unsalted butter, softened
  • ¼ teaspoon salt
  • 2 cups (226g) powdered sugar
  • 1 teaspoon vanilla
  • ½ teaspoon pumpkin pie spice
  • 3 tablespoons (45ml) heavy whipping cream

Instructions

  1. Preheat your oven to 350°F and line two cookie sheets with silpat or parchment paper.
  2. In a stand mixer, cream together the softened butter and granulated sugar. Add the egg and vanilla extract, mixing well.
  3. Stir in the pumpkin pie spice, baking soda, cream of tartar, and salt. Gradually add the all-purpose flour until blended.
  4. Scoop out 2 tablespoon balls of dough and place them on the prepared cookie sheets.
  5. Bake for 9-10 minutes, removing the cookies when the bottoms are just turning golden to ensure they stay soft.
  6. Let the cookies cool for 5 minutes before transferring them to a wire rack to cool completely before frosting.
  7. To make the frosting, beat the softened butter until creamy, adding salt. Gradually incorporate the powdered sugar until crumbly, then mix in the vanilla, pumpkin spice, and enough heavy whipping cream for a smooth consistency. Frost the cookies once cooled.

Notes

For best texture, do not overbake the cookies; remove them when the bottoms start to turn golden.
If the frosting is too thick, add a bit more heavy cream gradually until you reach your desired consistency.
Store cookies at room temperature to maintain softness.
