Description

These Pumpkin Snickerdoodles are a delightful treat with their warm spices and soft texture. Simple to make, they feature pumpkin puree and cozy flavors that make them perfect for any gathering or cozy afternoon snack.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 3 1/2 teaspoons cornstarch
  • 1 teaspoon cream of tartar
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons pumpkin pie spice
  • 1 cup granulated sugar
  • 3/4 cup light brown sugar packed
  • 1 cup unsalted butter softened
  • 1 large egg yolk
  • 3/4 cup pumpkin puree
  • 2 teaspoons vanilla extract
  • 1/2 cup white sugar
  • 4 teaspoons cinnamon

Instructions

  1. In a medium-sized bowl, whisk the flour, cornstarch, cream of tartar, baking soda, baking powder, salt, ground cinnamon, and pumpkin pie spice until combined. Set aside.
  2. In another large bowl, cream the softened butter, granulated sugar, and brown sugar using an electric mixer for about 1-2 minutes. Then mix in the egg yolk and vanilla extract, followed by the pumpkin puree.
  3. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Cover and refrigerate the dough for 30-40 minutes.
  4. Preheat the oven to 350°F. Prepare two large baking sheets by spraying or lining them with silicone mats.
  5. Scoop tablespoons of cookie dough onto the prepared sheets, keeping about 2 inches between each cookie.
  6. In a small bowl, whisk together the white sugar and 4 teaspoons of cinnamon. Roll each dough ball in this mixture and return them to the baking sheets.
  7. Bake for 10-13 minutes or until set. While the first batch bakes, refrigerate the remaining dough. Cool the cookies on the sheets for 5-10 minutes before transferring to a wire rack.

Notes

Chilling the dough is essential for easy handling.
These cookies can be stored in an airtight container for up to a week.
Try adding nuts or chocolate chips for a twist!
