Description

These Portobello Mushroom Burgers are bursting with flavor, featuring grilled mushrooms, sautéed veggies, and a creamy chimichurri sauce. Ideal for a quick dinner that’s both healthy and hearty, this recipe will satisfy your hunger in no time.

  • 4 large Portobello mushrooms
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup cheese (optional)
  • 1 medium red bell pepper, sliced
  • 1 medium red onion, sliced
  • 2 cups fresh spinach
  • 1 ripe avocado, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon red wine vinegar
  • 1/4 teaspoon chili flakes
  • 4 burger buns or flatbreads

Instructions

  1. Prep the grill by applying cooking spray or olive oil and bringing it to medium high heat.
  2. Stem and clean the portobello caps, then drizzle olive oil on both sides. Season with kosher salt, pepper, and oregano. Grill each side for 10 minutes until softened and marked, adding cheese if desired until melted.
  3. Sauté red bell pepper and onion in olive oil, seasoning with salt and pepper, for 10-15 minutes until browned. Transfer to a bowl and wilt the spinach in the same pan.
  4. In a blender, combine avocado, garlic, olive oil, parsley, cilantro, lemon juice, red wine vinegar, and chili flakes. Season and blend until smooth for the chimichurri sauce.
  5. Warm the buns or flatbread, spread the avocado mixture on the bottom, layer with mushrooms, spinach, sautéed peppers, and onions, then top with the bun.

Notes

For extra flavor, try marinating the mushrooms in balsamic vinegar before grilling.
Feel free to customize with your favorite toppings like lettuce or tomatoes.
