Ingredients
Scale
- 4 pork chops
- Salt & pepper to taste
- 1/4 teaspoon garlic powder
- Flour (for dredging)
- 4 tablespoons butter, divided
- 1 tablespoon olive oil
- 1/4 cup chicken broth or dry white wine
- 1 tablespoon lemon juice + zest of 1 lemon
- 1 tablespoon brined capers, drained
- 1/2 cup heavy/whipping cream
- Garnish: chopped parsley and/or freshly grated parmesan cheese
Instructions
- Season the pork chops generously with salt and pepper. Sprinkle with garlic powder and coat in flour.
- Heat a skillet over medium-high heat and add half the butter and the olive oil.
- Once the skillet is hot, add the pork chops and sear for 3-5 minutes per side or until golden brown. Transfer to a plate once cooked.
- Remove the skillet from heat and add chicken broth, lemon juice, lemon zest, remaining butter, and capers. Scrape up the browned bits from the pan.
- Stir in the cream and return the skillet to heat. Bring to a bubble and add the pork back in.
- Cook for an additional 3-5 minutes until the pork is cooked through and the sauce has thickened to your preference.
- Serve with chopped fresh parsley and/or parmesan cheese if desired.
Notes
For thinner pork chops, reduce the searing time to 3 minutes per side.
Customize the sauce by adjusting the cream and chicken broth amounts to achieve your desired richness.
Garnish with fresh herbs for an extra pop of flavor.
