Description

These Plum Bars offer a delightful blend of sweet, juicy plums and a buttery crust, perfect for a comforting dessert. Simple to make and utterly delicious, they’re a must-try for anyone who loves homemade goodies.


Ingredients

  • 1 ¾ cup all purpose flour
  • ⅔ cup sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, cold
  • 1 egg, whisked
  • 2 tbsp milk
  • 4 plums, diced small
  • ¼ cup sugar
  • 2 tbsp all purpose flour
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 400° F and line an 8×8 baking dish with parchment paper.
  2. In a large bowl, combine the flour, sugar, baking powder, and salt. Grate the cold butter directly into the bowl using a cheese grater.
  3. Mix with your hands until the butter is in small chunks, then add the whisked egg and milk, stirring to combine.
  4. In a separate medium bowl, combine the diced plums with sugar, flour, and vanilla extract, mixing well.
  5. Press ⅔ of the crust mixture into the bottom of the prepared baking pan.
  6. Spread the plum mixture evenly over the crust in the pan, then crumble the remaining crust mixture on top.
  7. Bake for 30-32 minutes or until the edges are golden brown. Allow to cool at room temperature before slicing.

Notes

Ensure your butter is cold for a flaky crust.
Let the bars cool completely for the best cutting results.
These bars pair well with a scoop of vanilla ice cream.
