- 1 3/4 cups chopped peaches, 2-3 peaches
- 1 cup confectioners’ sugar
- 1 tablespoon honey
- 1/2 teaspoon pure vanilla extract
- 1 to 2 tablespoons whole milk
Instructions
- Preheat your oven to 350 degrees F.
- To prepare the streusel topping, melt the butter in a medium saucepan over medium heat until it foams and turns brown, about 5-7 minutes. Transfer to a bowl and let it cool. Add the flour and sugar, mixing until well combined. Refrigerate the mixture while working on the cake.
- In a large bowl, combine the flour, sugar, baking powder, cinnamon, and salt. Set aside.
- In a medium bowl, mix the ricotta cheese, eggs, and vanilla. Gradually incorporate the melted butter, whisking until smooth.
- Combine the ricotta mixture with the dry ingredients, stirring until just combined. Fold in the chopped peaches gently.
- Grease a 9-inch springform pan with nonstick spray. Pour the batter into the pan and top evenly with the streusel.
- Bake for 45 to 55 minutes, or until a toothpick inserted into the cake comes out clean. Allow cooling in the pan for 30 minutes before removing the sides of the pan.
- Meanwhile, prepare the honey glaze by whisking together the confectioners’ sugar, honey, vanilla, and 1 tablespoon of milk until smooth. Adjust the consistency with additional milk if necessary.
- Drizzle the glaze over the cooled cake, slice it up, and serve!
