- 2/3 cup brown sugar, light brown sugar, packed
- 1/2 tsp ground cinnamon
- 1 tbsp lemon juice
- 1 tbsp cornstarch
Instructions
- Cube the peaches, peeling fresh ones or thawing frozen ones if necessary.
- In a medium saucepan over medium heat, combine the cubed peaches, brown sugar, cinnamon, lemon juice, and cornstarch.
- Heat the mixture until the peach juice separates and reaches a simmer.
- Cook for 10 minutes, stirring occasionally until the mixture thickens. Use a potato masher to lightly mash about 20% of the peaches.
- After mashing, cook for an additional minute then remove from heat. Allow to cool completely before using.
