Description

  • 2 cups all-purpose flour
  • 2 teaspoons all-purpose flour (for coating peaches)
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup plain Greek yogurt, at room temperature
  • 1 1/2 cups diced peaches
  • 2 tablespoons turbinado sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with 12 paper liners, spraying them with nonstick cooking spray.
  2. In a medium bowl, whisk together the flour, baking powder, ground cinnamon, and salt. Set aside.
  3. In a stand mixer, cream the unsalted butter and granulated sugar until light and fluffy, about 2 minutes. Beat in the eggs and vanilla extract until well combined.
  4. Mix in the Greek yogurt until just combined.
  5. Add the dry ingredients to the mixture, mixing on low speed until just combined. Do not overmix. Toss the diced peaches with 2 teaspoons of flour and gently fold them into the batter.
  6. Scoop the muffin batter evenly into the prepared muffin cups.
  7. In a small bowl, mix the turbinado sugar with cinnamon, then sprinkle over the muffin tops.
  8. Bake for 20-24 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes before transferring to a wire rack.

Notes

These muffins are best enjoyed fresh but can be stored in an airtight container for up to 3 days.
Feel free to substitute the peaches with other fruits like blueberries or berries for a different flavor.
For added richness, consider using buttermilk instead of Greek yogurt.
