Ingredients

  • 24 ounces fresh peaches, peeled, pitted, and diced
  • 2 tablespoons lemon juice
  • 1.75 ounces sure-jell powdered pectin
  • 3 ½ cups granulated sugar

Instructions

  1. Peel, pit, and dice the peaches, then place them in a large pot. Crush the peaches until desired consistency using a potato masher or fork.
  2. Stir in the lemon juice and pectin, ensuring everything is mixed thoroughly.
  3. Set the pot over medium-high heat and stir constantly. Bring the mixture to a boil.
  4. Add all the sugar at once and stir until completely dissolved.
  5. Return to a full rolling boil and let it boil for 1 minute, stirring constantly to avoid sticking.
  6. Remove the pot from heat and skim off any foam on the surface.
  7. Pour the hot jam into clean mason jars, leaving about ¼ inch of space at the top. Wipe the rims clean and seal the jars with their lids.
  8. Allow the jars to cool to room temperature before storing in the refrigerator for up to 3 weeks or in the freezer for up to 6 months.
