Ingredients

Scale
  • 1 cup unsalted butter, melted
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2½ cups all-purpose flour
  • ¼ teaspoon salt
  • 5 cups peaches, peeled and diced (about 56 medium peaches)
  • ⅓ cup light brown sugar
  • 2 tablespoons granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ¾ cup old-fashioned oats
  • ¾ cup all-purpose flour
  • ½ cup packed light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon sea salt
  • 6 tablespoons unsalted butter, melted
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (180°C) and line a 9 inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.
  2. In a large bowl, combine the melted butter, sugar, and vanilla extract and stir until well mixed.
  3. Add in the flour and salt, then mix until a soft dough forms.
  4. Press the dough evenly into the bottom of the prepared pan.
  5. Bake for 15 minutes or until the edges turn lightly golden.

Notes

Feel free to adjust the sweetness by adding more or less sugar according to your taste.
Ensure you allow the bars to cool completely before slicing for clean edges.
These bars can be stored in an airtight container for up to a week.
