Description

This Peach Cobbler is a delightful summer dessert featuring ripe peaches and a simple, buttery crust. It’s perfect for gatherings or a cozy family dinner, bringing a taste of home with each bite.


Ingredients

  • 1.5 kg yellow peaches, peeled, stone removed, cut into eight wedges
  • 1/4 cup caster sugar
  • 1 tsp cornflour/cornstarch
  • 1 tbsp lemon juice
  • 1/8 tsp salt
  • 1 1/4 cups plain flour
  • 1/3 cup caster sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 85 g unsalted butter
  • 1/2 cup plain yoghurt
  • 1 tsp demerara sugar
  • 1/2 tsp cinnamon powder
  • Ice cream or whipped cream

Instructions

  1. Combine peaches and sugar in a large bowl and let them macerate for 40 minutes to release juices.
  2. Preheat the oven to 210°C (410°F) during the maceration process.
  3. Drain the peaches in a colander, keeping the juices.
  4. In a large bowl, mix 1/4 cup of saved juice with cornflour, salt, and lemon juice to create the syrup.
  5. Toss the peaches in the syrup, adjusting sweetness with more lemon or sugar as needed.
  6. Transfer peaches and syrup into a medium baking dish and parbake for 12 minutes.

Notes

Adjust sweetness based on the ripeness of peaches.
Serve with ice cream or whipped cream for extra indulgence.
The crust can be flavored by adding a pinch of nutmeg.
