Description

This Peach Cobbler Oatmeal features a delightful mix of oats, fresh peaches, and a sweet crumble topping. It’s easy to prepare and makes for a comforting breakfast or anytime snack!


Ingredients

  • 1 cup quick cooking oats
  • 1 tablespoon chia seeds
  • 1 cup milk
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup chopped peaches
  • ½ cup rolled oats
  • 1 tablespoon maple syrup
  • 1 teaspoon coconut oil
  • ¼ teaspoon ground cinnamon
  • Plain Greek yogurt

Instructions

  1. Preheat your oven to 375ºF and prepare the crumble topping by mixing oats, maple syrup, coconut oil, and cinnamon until a crumble forms.
  2. Transfer the mixture to a small baking sheet and bake for 7-10 minutes until golden brown, stirring halfway through. Remove and set aside.
  3. In a small saucepan, combine all oatmeal ingredients and heat on medium/high until boiling.
  4. Lower the heat to low, stirring continuously for 3-5 minutes until the oatmeal thickens.
  5. Serve the oatmeal topped with the crumble and a dollop of Greek yogurt.

Notes

Feel free to use fresh or frozen peaches just as delicious!
The crumble topping can be made ahead of time and stored for quick breakfasts.
Adjust sweetness by modifying the amount of maple syrup.
