Description

This Peach Cake is bursting with juicy peaches and a tender crumb. It’s simple to make, featuring fresh peaches, buttery goodness, and Greek yogurt for a moist finish, perfect for gatherings or a cozy dessert at home.


Ingredients

  • 23 fresh peaches (about 1¼ pounds)
  • 1 stick butter (softened at room temperature)
  • ¾ cup sugar (plus 23 tablespoons extra)
  • 2 large eggs
  • ⅔ cup plain greek yogurt
  • 1 teaspoon vanilla extract
  • ½ to 1 teaspoon ground cinnamon (plus a sprinkle of pumpkin spice if you like extra warm spices!)
  • 1 pinch salt
  • 2 teaspoons baking powder
  • 1 ⅔ cups all-purpose flour (spooned and leveled; or 1 ¼ cups scooped; or 200g weighed out)
  • powdered sugar (optional, to garnish)

Instructions

  1. Preheat the oven to 350°F. Grease an 8 or 9-inch springform pan and line the bottom with baking parchment.
  2. Wash the peaches, dry them, remove pits, and cut 8 thin wedges. Dice the remaining peaches to measure about 2 heaping cups. Set aside extra peaches for snacking.
  3. In a medium bowl, cream together the softened butter and sugar until pale and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing for 30-60 seconds after each addition.
  5. Incorporate Greek yogurt and vanilla into the egg mixture, beating until just combined.
  6. Sprinkle cinnamon, salt, and baking powder over the mixture and beat until well combined.
  7. Gently fold in flour, ensuring not to overmix, then add the diced peaches.
  8. Spread the batter in the prepared pan and press the peach slices on top. Sprinkle with remaining sugar.
  9. Bake for 50-60 minutes for an 8-inch pan or 35-45 minutes for a 9-inch pan. Cover loosely with foil after 40 minutes to prevent over-browning. Cool in the pan for 10-15 minutes before serving.

Notes

For added flavor, feel free to use a sprinkle of pumpkin spice along with the cinnamon.
Adjust the amount of peaches according to your preference for a moist cake.
Serve warm with a dusting of powdered sugar on top if desired.
