Description

This easy Pasta Salad is bursting with flavors from mozzarella, salami, and fresh veggies, making it a delightful side for picnics and BBQs. It’s quick to prepare and perfect for gatherings!


Ingredients

Scale
  • 1 pound short pasta shapes such as rotini or bow ties
  • 8 ounces mini mozzarella balls, halved
  • 1 pound salami, chopped
  • 1 (6-oz) jar marinated artichoke hearts, drained and sliced
  • 3 cups cherry tomatoes, halved (about 1 ½ pints)
  • ½ cup black olives, sliced
  • ¼ cup chopped sun-dried tomatoes
  • 2 tablespoons sliced fresh basil
  • 2 tablespoons chopped fresh parsley
  • 2 cups italian dressing, homemade or store-bought

Instructions

  1. Cook the pasta according to package directions. Drain in a colander, then rinse under cold water until cooled. Drain well again.
  2. In a large bowl, combine all salad ingredients.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Cover the bowl and chill the salad for at least 1 hour before serving.

Notes

For best flavor, chill the salad for a few hours before serving.
Feel free to customize with your favorite veggies or proteins.
Can be stored in the fridge for up to 3 days.
