Description

This Parmesan Crusted Chicken features juicy chicken breasts topped with a rich blend of Parmesan and provolone cheeses, enhanced by crispy panko breadcrumbs. It’s a quick and satisfying meal perfect for any night of the week!


Ingredients

  • 2 boneless skinless chicken breasts cut in half lengthwise
  • ¾ cup grated parmesan cheese divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt or to taste
  • ½ teaspoon pepper or to taste
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small mixing bowl, combine 4 tablespoons of melted butter, garlic powder, onion powder, salt, and pepper. Brush each chicken breast with this mixture.
  3. Place the chicken breasts on the grill pan and cook for 3-4 minutes, then flip them over.
  4. In a medium bowl, combine ½ cup of Parmesan cheese and provolone cheese, setting this mixture aside.
  5. Top each chicken breast with the cheese mixture, cooking for another 3-4 minutes until the internal temperature reaches 165°F.
  6. Remove the chicken from the grill pan and place them on a foil-lined baking sheet.
  7. Preheat your oven’s broiler on high.
  8. In another bowl, mix panko breadcrumbs with the remaining ¼ cup Parmesan cheese and 2 tablespoons melted butter. Sprinkle this over the chicken breasts.
  9. Place the baking sheet under the broiler for 1-2 minutes or until the breadcrumbs turn golden and crispy. Watch closely to avoid burning.
  10. Remove from broiler and let the chicken rest for 5 minutes before serving.

Notes

For extra flavor, consider adding herbs like oregano or thyme to the cheese mixture.
Ensure the chicken is flattened evenly for even cooking; a meat mallet can help with this.
Serving with a side salad or roasted vegetables makes for a balanced meal.
