Description

This Pan-Seared Cod with the Best Tomato Basil Sauce is a delightful dish featuring fresh cod, juicy cherry tomatoes, and aromatic garlic. Quick to prepare, it offers a burst of flavor that’s perfect for a healthy dinner and is simple enough for any home cook to master.


Ingredients

  • 2 tablespoons (28ml) olive oil
  • 1/4 teaspoon crushed red pepper flakes
  • 3 large cloves garlic, finely minced
  • 1 pint cherry tomatoes, sliced in half
  • 1/4 cup (57ml) dry white wine
  • 1/2 cup fresh basil, finely chopped
  • 2 tablespoons (28ml) fresh lemon juice
  • 1/2 teaspoon fresh lemon zest
  • 1/2 teaspoon salt
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon fresh ground black pepper
  • 1 and 1/2 pounds fresh cod, cut into 4 fillets

Instructions

  1. Heat olive oil in a large sauté pan over medium heat.
  2. Add crushed red pepper flakes and garlic; sauté for 1 minute until fragrant.
  3. Stir in the cherry tomatoes; cook until soft and blistering, about 8 to 12 minutes.
  4. Pour in the white wine, stir, and bring to a gentle simmer.
  5. Mix in basil, lemon juice, lemon zest, salt, sugar, and pepper; cook for an additional 2 minutes before tasting and adjusting seasoning.
  6. Transfer the sauce to a bowl and set aside.

Notes

For a saucier sauce, add an extra 1/4 cup of white wine.
Feel free to adjust the spice level by adding more or less crushed red pepper flakes.
To enhance flavor, serve over a bed of pasta or with crusty bread.
