Description

Ingredients

  • 4 boneless pork chops ¾-inch thick
  • 2 cups water
  • ¼ cup kosher salt
  • 2 tablespoons brown sugar
  • 1 teaspoon black peppercorns
  • 2 cups ice
  • ½ teaspoon garlic powder
  • ½ teaspoon dry mustard powder
  • ½ teaspoon paprika

Instructions

  1. Combine water, kosher salt, brown sugar, and black peppercorns in a saucepan. Bring to a boil until dissolved.
  2. Stir in ice to cool the brine completely.
  3. Pour the cooled brine over the pork chops in a bowl or freezer bag. Refrigerate for 30 minutes to 2 hours.
  4. Preheat the oven to 400°F and line a baking sheet with aluminum foil.
  5. Remove pork chops from brine and pat dry with a paper towel. If needed, cut small slits in the fat cap.
  6. In a bowl, mix brown sugar, garlic powder, mustard powder, and paprika. Rub the mixture onto both sides of the pork chops.
  7. Place pork chops on the baking sheet and bake for 16 minutes.
  8. Switch the oven to broil and broil the pork chops for an additional 2-4 minutes until the internal temperature reaches 140°F.
  9. Remove from the oven and let rest for 5 minutes before serving.

Notes

For extra flavor, let pork chops marinate in the brine for the full 2 hours.
Ensure the internal temperature reaches at least 145°F for safe consumption.
These pork chops pair well with a side of roasted vegetables or mashed potatoes.
