- 4 boneless pork chops ¾-inch thick
- 2 cups water
- ¼ cup kosher salt
- 2 tablespoons brown sugar
- 1 teaspoon black peppercorns
- 2 cups ice
- ½ teaspoon garlic powder
- ½ teaspoon dry mustard powder
- ½ teaspoon paprika
Instructions
- Combine water, kosher salt, brown sugar, and black peppercorns in a saucepan. Bring to a boil until dissolved.
- Stir in ice to cool the brine completely.
- Pour the cooled brine over the pork chops in a bowl or freezer bag. Refrigerate for 30 minutes to 2 hours.
- Preheat the oven to 400°F and line a baking sheet with aluminum foil.
- Remove pork chops from brine and pat dry with a paper towel. If needed, cut small slits in the fat cap.
- In a bowl, mix brown sugar, garlic powder, mustard powder, and paprika. Rub the mixture onto both sides of the pork chops.
- Place pork chops on the baking sheet and bake for 16 minutes.
- Switch the oven to broil and broil the pork chops for an additional 2-4 minutes until the internal temperature reaches 140°F.
- Remove from the oven and let rest for 5 minutes before serving.
Notes
For extra flavor, let pork chops marinate in the brine for the full 2 hours.
Ensure the internal temperature reaches at least 145°F for safe consumption.
