  • 2 tablespoons olive oil
  • pounds chicken breast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 16 ounces orzo
  • 4 cups chicken broth
  • 1½ cup heavy cream
  • 4 ounces cream cheese
  • 1 teaspoon salt
  • ¼ cup parmesan cheese, plus more for garnish
  • 3 cloves garlic, minced
  • 1 can quartered artichoke hearts, (14 ounce) drained
  • 8 ounces fresh spinach

Instructions

  1. Cut the chicken into 1 inch cubes and season with salt, pepper, and garlic powder.
  2. Heat a large skillet over medium-high heat and add olive oil. Once hot, spread the chicken in a single layer in the pan. Cook for 3-4 minutes, then stir and cook for another 3-4 minutes.
  3. Add the orzo to the skillet alongside the chicken broth and heavy cream. Stir and bring to a simmer. Cook for about 10-12 minutes or until the orzo is tender, stirring occasionally to scrape the bottom.
  4. Stir in salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking, stirring regularly until the spinach is wilted and the cheese is incorporated.
  5. Garnish with additional parmesan and fresh cracked pepper.

Notes

Feel free to add more vegetables for extra flavor and nutrition.
Substitute half-and-half for a lighter option instead of heavy cream.
Adjust the salt based on the saltiness of the chicken broth used.
