Description

These Meal Prep Breakfast Burritos are packed with flavor and simple to prepare. With savory sausage, eggs, fresh veggies, and cheddar cheese, they make for a quick and satisfying meal. Ideal for busy mornings or leisurely brunches, these burritos are a delicious way to kickstart your day!


Ingredients

  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook the meat of your choice in a medium skillet over medium heat until fully cooked. Remove and set aside in a bowl.
  2. In the same skillet, add the chopped vegetables and a pinch of salt. Sauté for 3-5 minutes until soft.
  3. Whisk the eggs and cottage cheese together in a large bowl, seasoning with salt and pepper. Pour into the skillet with the vegetables and scramble until cooked through.
  4. To assemble, take one tortilla, add ¾ cup of the egg mixture, followed by 2 tablespoons of meat and 2 tablespoons of cheese.
  5. Fold in the sides and roll the burrito tightly. Repeat for the remaining ingredients until everything is used.
  6. To store for later, wrap each burrito in foil and arrange them on a baking sheet in the freezer to prevent sticking. Once frozen, transfer to a plastic bag or container for up to 2 months.
  7. These burritos can also be stored in the fridge wrapped in foil for up to 1 week.
  8. To reheat, use a microwave or bake in the oven at 375°F for 15-20 minutes.
