Description

These mashed red potatoes are simply irresistible! With creamy butter, sour cream, and garlic powder, they make the perfect comfort food for family dinners or gatherings. Quick, simple, and full of flavor, this dish is an essential part of any meal plan.

Ingredients

Scale
  • 4 pounds red potatoes, peeled and cut into 1" dice
  • 2 teaspoons salt, (for boiling water)
  • 3 tablespoons butter, room temperature
  • 1/2 cup sour cream
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 cup milk

Instructions

  1. Wash the potatoes, peel if desired, and cut into 1-inch cubes.
  2. Place the potatoes in a pot, cover with cold water, and add 2 teaspoons of salt. Bring to a boil and cook for 20-30 minutes, or until fork-tender.
  3. Drain the water, return the potatoes to the pot, and add butter, sour cream, salt, and garlic powder.
  4. Mash the potatoes with a hand masher, adjusting smoothness with up to 1/4 cup of milk as needed.
  5. Transfer to a serving bowl, top with a pat of butter and chopped parsley, and enjoy!

Notes

For a richer flavor, consider adding shredded cheese to the mashed potatoes.
Adjust milk quantity based on desired consistency for creaminess.
Chopped herbs can enhance the taste when serving.
