Description

These marinated tomatoes shine with garlic and fresh herbs, combining delicious flavor with simple preparation. A perfect addition to any meal, they are ideal for gatherings or quick weeknight dinners.


Ingredients

  • 1 pound grape or cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 to 2 cloves garlic, grated
  • 1 tablespoon finely chopped basil
  • 1/2 tablespoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh thyme
  • dash of crushed red pepper flakes
  • kosher salt, to taste

Instructions

  1. In a medium bowl, combine the halved tomatoes with olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and salt.
  2. Tightly wrap the bowl with plastic wrap and let it sit at room temperature for at least 30 minutes, preferably 1 to 2 hours. Stir occasionally to ensure even marination. If keeping longer than 2 hours, refrigerate to maintain freshness.

Notes

Allowing the tomatoes to marinate longer enhances their flavor.
These tomatoes can be served as a side dish or atop salads and sandwiches.
Store any leftovers in the refrigerator for up to 3 days.
