- 1 pound grape or cherry tomatoes, halved
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 to 2 cloves garlic, grated
- 1 tablespoon finely chopped basil
- 1/2 tablespoon finely chopped fresh parsley
- 1 teaspoon finely chopped fresh thyme
- dash of crushed red pepper flakes
- kosher salt, to taste
Instructions
- In a medium bowl, combine the halved tomatoes with olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and salt.
- Tightly wrap the bowl with plastic wrap and let it sit at room temperature for at least 30 minutes, preferably 1 to 2 hours. Stir occasionally to ensure even marination. If keeping longer than 2 hours, refrigerate to maintain freshness.
Notes
Allowing the tomatoes to marinate longer enhances their flavor.
