Description

Ingredients

  • 2¼ cups flour
  • 2 tablespoons cornstarch
  • 2 teaspoons baking powder
  • 1¾ sticks butter (softened, 14 tablespoons)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 4 large eggs (at room temperature)
  • ⅓ cup heavy cream
  • 3 tablespoons unsweetened cocoa powder
  • 1 tablespoon granulated sugar
  • 2 tablespoons heavy cream
  • powdered sugar or chocolate ganache

Instructions

  1. Preheat your oven to 350°F. Line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, whisk the flour, cornstarch, and baking powder together and set aside.
  3. Beat the softened butter using a hand mixer until creamy. Gradually add sugar, vanilla, and salt. Beat until pale and fluffy, about 2–3 minutes.
  4. Add the eggs one at a time, beating the mixture on high speed for 30–60 seconds after each addition.
  5. Turn the mixer to medium-high and alternate adding the flour mixture and heavy cream until the batter is smooth.
  6. Pour ⅔ of the batter into the prepared pan and smooth the top. Mix the remaining ⅓ batter with cocoa powder, the extra tablespoon of sugar, and 2 tablespoons of cream. Spread this chocolate batter over the vanilla layer and swirl using a knife or fork for a marbled effect.
  7. Bake at 350°F for 55–60 minutes. The cake is done when a toothpick inserted into the center comes out clean or with moist crumbs.
  8. Let the cake cool in the pan for 10 minutes, then remove and cool completely on a wire rack. Dust with powdered sugar or top with chocolate ganache before serving.

Notes

Ensure the butter is softened to achieve a creamy texture in the batter.
For a richer flavor, feel free to add a bit more cocoa powder to the chocolate batter.
Store any leftover cake in an airtight container to maintain its moisture.
